Our Story

Bistro Amasa was born from a simple idea — that great food and genuine hospitality have the power to make people feel at home. Founded by longtime friends and collaborators Julian Martinez and Jesse Gaddy, the restaurant reflects their shared love of craft, comfort, and community.

 

Set within the historic Upham Hotel, Bistro Amasa brings old-world technique and modern California creativity to the table. It’s a place for unhurried meals, thoughtful details, and connection — where guests can linger and share something memorable, whether it’s a celebration or simply a weeknight well spent.

Julian Martinez

EXECUTIVE CHEF

Julian Martinez is a Santa Barbara-based chef and restaurateur with over 18 years of experience in the hospitality industry. He is the Executive Chef and Co-Owner of Barbareño, a beloved Santa Barbara restaurant recognized in the Michelin Guide. Julian’s culinary background includes time at acclaimed restaurants such as The French Laundry, The Thomas, Wexler’s, Doc’s of the Bay, and the Santa Barbara Club, with experience spanning both kitchen and operational leadership. He holds a bachelor’s degree in Organizational Studies from Claremont McKenna College and a master’s certificate in Foodservice Management from Cornell University.

GENERAL MANAGER

Jesse Gaddy is a Santa Barbara-based restaurateur with over a decade of experience in hospitality, restaurant operations, and design. He is the Co-Owner and General Manager of Barbareño, where his leadership has helped guide the restaurant through a decade of success. Jesse’s expertise spans service systems, kitchen and spatial design, food and beverage, and staff development—creating smooth day-to-day operations and strong guest experiences. His ability to balance creative vision with operational clarity has made him a sought-after collaborator among restaurateurs and chefs alike.
